easy Homemade BISCUITS

Items needed:
Mixing bowl
Measuring cups
Skillet or baking sheet
Pastry cutter or fork
Spoon

INGREDIENTS:

2      cups                Self-Rising Flour
                                  *plus about 1/3 cup extra flour to sprinkle your hands to prevent sticking
1/3  cup                   Lard (or shortening)
1     stick (1/2 cup)     Butter or margarine
1/3  cup                   Sour Cream
1     cup                   water

substitute: 
Instead of sour cream and water, can use 
1 cup buttermilk  -or-  1 cup milk + 1 tsp vinegar mixture

DIRECTIONS:  
1. Preheat oven 500 degrees  
2. In a mixing bowl, place 2 cups Self Rising Flour, 
3. Add: Lard (shortening) and 2 tablespoons butter to flour
4. Use pastry cutter (or fork) to cut lard and butter into flour (tiny pea size pieces) 
5. Add: Sour Cream and 1 cup water, Mix well.
6. Sprinkle your hands and top of wet mixture with flour.


 7. Pinch small amount of dough into your hand, gently roll into ball. 
     Place is skillet (or baking sheet).  Repeat step 7 until all dough is used.
     Sprinkle your hands often with extra flour to prevent dough from sticking to hands. 
      
 8. Top each biscuit with a pinch of butter.

  9.  Place skillet (or baking sheet) in oven on middle rack.
10. Cook for 9 minutes or until lightly golden brown.
      Turn broiler on high to brown the top more if desired. Watch closely - don't burn!

Pancakes

Our new and improve pecan pancakes! My mom and me decided to have a little competition of who could add to their pancake with the things they loved and the pancake still amazing a delicious!! 

I added frozen icing to mine just because I love frozen icing. And to tell you the truth, it was not the best. But my mom put pecans strawberry jelly and whip cream on hers. Add, it was AMAZING!! (Just sayin') So I decided to "Show & Tell" y'all how to make it.

GRACEFUL GAB: PANCAKE

INGREDIENTS, you will need:

1 egg
1 cup of buttermilk ( if you need more you can add it)
2 Tbsp of vegetable oil
1 Tbsp of maple syrup
1 cup of plain flour
2 tsp baking soda
1/2 tsp salt
butter or oil for frying
optional:
pecans, strawberry jelly (or jam), and whip cream.
or your fav' toppings and fillings

DIRECTIONS:

#1. Crack egg into a large mixing bowl. Whisk in the butter milk, vegetable oil, and maple syrup.

#2. In a small bowl, whisk together the flour, baking powder, and salt. Add this mixture to the egg mixture and stir just until all the ingredients are wet. The batter should be lumpy ( if way too lumpy, you may need to add more buttermilk).


#3. Lightly butter or oil a nonstick frying pan, and then warm it on the stove-top over medium heat for about 1 minute. Turn the heat down to medium low. Use 1/4-cup measuring cup to pour the batter for each pancake into the pan.


#4. When the top of the pancakes start to bubble [option: can add chopped pecans to center] carefully flip the pancakes over with a spatula. Continue cooking them until the underside is golden brown. Place on plate.


#5. Scoop the strawberry jelly in the middle than take your pecans and surround it, then top with a spoon full or two of whip cream.
